Nick was born on March 28, 1986, in Guttenberg, the son of Gary and Barb Westhoff.

Nick graduated from Clayton Ridge High School with the class of 2004 and later received his AA degree in agriculture from Kirkwood College. Nick’s love for agriculture lead to several jobs in that field. On June 2, 2007, Nick was united in marriage with Jessie Adams at St. Mary’s Catholic Church. After their union they began farming together on his family's farm. In 2009 they bought their own herd of dairy cattle and became full time farmers. May of 2011, Nick was diagnosed with a cancerous brain tumor. He underwent brain surgery and radiation that gave him five years of remission. During this time the couple was fortunate enough to adopt four beautiful children that Nick loved with all his heart. January of 2017 Nick's cancer returned. After seven years of treatments and a hard battle Nick found peace knowing he gave it his all.
